Details from Last Year’s Festival, 2018

February 2nd, Whiskey Fest Dinners

White Whale Restaurant & Jameson, $100

Start your weekend having your senses delighted by a multiple course whiskey pairing meal prepared by Chef Aaron Rail, paired with Jameson and served at 7PM in the Private Dining room.

Chef Aaron has worked long and hard to create relationships with many local farms, fisheries and food producers. This all culminates in his seasonally shifting menu, highlighting the best ingredients our region has to offer. Everything on the menu is crafted from scratch in-house, including all sauces, dressings and even breads.

Menu will include;
– Smoked Sable fish
– 60 Day Jameson Whisky Aged Beef
– Foie Gras
– Whisky Balls

Spirits will include;

Kingfisher Oceanside Resort & Glenlivet, $125

Start your weekend with an amazing 4-course whiskey pairing dinner experience prepared by Executive Chef Nyle Petherbridge, paired with Glenlivet and served at 6:30PM in the Kingfisher Event Room.

Nyle is an accomplished Canadian Red Seal Chef and has over 20 years’ experience including the Metropolitan Hotel, Le Méridien, Fairmont Hotel Vancouver. He is inspired by the opportunity to create menus focused on not only local and wild product but also safe and sustainable ingredients.

Presented by Andrew Walls, Victoria Caledonian Distillery & Twa Dogs Brewery.

You will be discussing Independently bottled Scottish Whiskies, Cask Finishing and the whisky regions of Scotland.
